The Cantonese homepage uses the "Subpage Fullwidth - Cantonese " template. This template works the same as your main homepage in regards to the header and section options.

There are two subpage templates available to display for the Cantonese subsite, which will display the separate logo, header, footer, etc.  These two templates work the same as your default subpage templates in regard to the header and section options. 

These are labeled:

• Subpage - Cantonese
• Subpage Fullwidth - Cantonese

When creating pages specific to the Cantonese site, you'll want to assign the "Cantonese" group to the page. Same for any Mandarin content pages you'll be creating when publishing you'll need to assign it to the "Mandarin" Group so it can populate on the Mandarin subsite.
